Broccoli Smash (with Homemade Garlic Infused Olive Oil)

Take your broccoli to the next level with this easy, delicious Broccoli Smash recipe! Ready in under 30 minutes & it has AMAZING HEALTH benefits!

Ingredients:

  • 1 large head of broccoli

  • 1 cup of grated parmesan cheese

  • 2 whole cloves of minced garlic

  • 3 tablespoons of extra-virgin olive oil

  • ¼ teaspoon of salt

  • ¼ teaspoon of mustard powder

  • Lemon zest from 1 lemon

  • Pepper to taste

Step 1: Preheat the oven to 400 degrees Fahrenheit & wash the broccoli head as a whole.


Step 2: Take the mustard powder, salt, lemon zest, garlic & extra virgin olive oil & whisk them all together in a small bowl.


Step 3: Take a large pot full of water, add a pinch of salt & bring it to a rolling boil. Once the water is ready, take your washed broccoli & place it top down into the boiling water until it just starts to get soft (this should take 4-5 minutes). Once it is done place it in a colander so that it can begin to drain & cool down.


Step 4: Take a baking sheet & lightly cover it with the garlic infused extra virgin olive oil that you created in step 3. Make sure to save about half of the mixture for a future step.


Step 5: Once the broccoli has cooled enough that it can be handled, break it apart into small florets. Next, take those pieces & cut them so that the stem is sliced thinly. Pat them dry with a paper towel & arrange them on the baking sheet so that they don’t overlap.


Step 6: Take a sturdy jar or mug (any dish with a flat round base will work) & smash each of the sliced florets while they are still on the baking sheet.


Step 7: Take the remainder of the garlic infused extra virgin olive oil & brush the tops of the smashed pieces. Next, take your parmesan & generously cover each piece of broccoli. Finish off with a pinch of salt & pepper to taste.


Step 8: Place the sheet in the preheated oven & bake for 15 minutes or until the broccoli is starting to show signs of browning.

Step 9: Allow to cool for 5 minutes before serving. Can be enjoyed as is, or you can also add a drizzle of sriracha, balsamic glaze, or fresh lemon juice to enhance the flavor even more. Enjoy!
